Remy's Sweet Potato Pup Cake

Ingredients
Remy's Sweet Potato Pup Cake
- 1 cup oat flour
- 1 cup rolled oats
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- 3 large eggs
- ¼ cup honey
- ¼ cup molasses
- ¼ cup vegetable oil
- 1 cup sweet potato puree
- 1 cup carrots shredded
Cream Cheese Frosting
- 8 oz cream cheese softened
- 1 tablespoon honey
- 1 tablespoon peanut butter
- 1 splash water
Instructions
Remy's Sweet Potato Pup Cake
- Pre-heat oven to 350 degrees. Lightly grease two 4-inch cake pans and line a small muffin tin with papers. Set aside.
- In a large mixing bowl, combine the oat flour, rolled oats, baking powder, and baking soda. Set aside.
- In a separate mixing bowl, whisk together the honey, molasses, oil, and sweet potato puree. Stir the wet ingredients into the dry until combined. Fold in the carrots. The batter will be thick and slightly lumpy.
- Fill 6 muffins tins ⅔ of the way and then split the remaining batter between the two prepared cake pans. Bake until a toothpick inserted into the center of the cakes comes out clean (about 16 to 20 minutes for the muffins and 22 to 28 minutes for the cakes). Completely cool on a wire rack before frosting.
Cream Cheese Frosting
- Stir together the cream cheese, honey and peanut buter until smooth and well combined.
- Thin the mixture with a bit of water, if necessary, until it is thick yet some-what pipe-able.
- Spread or pipe on the cake layers and on top of the cooled muffins, if desired.

I made this for our dog's 4th birthday today. It looks so good! With a few minor tweaks, it would also be a great human cake. 🙂

I make sweet potato dog treats sometimes and a friend asked me for a sweet potato cake for her dog's birthday. I gave this a shot, topped it with blueberries and doggie sprinkles, and it came out SO STINKIN CUTE. It was so easy to make!! I blended up a can of salmon into the frosting for some more omega 3s - it smelled AWFUL lol but the pooch loved it! You made a very special boy's 5th birthday extra tasty, thank you for this recipe!
