The Best Chocolate for Chocolate Whipped Cream
Using unsweetened cocoa powder is the easiest way to make chocolate whipped cream. You could use melted chocolate, but it is not worth the hassle of melting and cooling the chocolate all for a comparable flavor.
Instead, use cocoa powder. And if you can, make it Dutch processed.
Dutch processed cocoa uses cocoa beans where their acidity has been neutralized. Alkaline cocoa powder is darker in color and more mellow in flavor than natural cocoa powder.
Tools and Equipment
All you need to make homemade whipped cream is a mixing bowl and a whisk! While is can be a bit of an arm workout, you can totally make whipped cream by hand.
You can of course use an electric whisk to make whipped cream too. Use a stand or hand mixer fitted with the whisk attachment.

Chocolate Whipped Cream Recipe FAQs
Over-mixing whipped cream will make it grainy. If it isn't too bad, you can save it by add a couple tablespoons of heavy cream and whisking to combine.
Tessa's Tips
- Keep the cream as cold as possible before getting started.
- To keep from over-mixing, stop the electric mixer once the cream thickens and holds soft peaks then finish whisking by hand.
- Make sure to look for a heavy whipping cream that is between 33 to 35% MF (milk fat)
- Use the whipped cream shortly after making.
- For icing cakes, slightly under-whipping (medium peaks) so that it does not get over-worked as you go. Whisk until stiff peaks for piping.
