Pumpkin S'mores Sheet Cake
This Pumpkin S’mores Sheet Cake will no doubt be this season’s favorite dessert. Sheet cakes made a come-back last year, and their adaptability and ease means they are likely to stick around. Not just a vehicle for frosting (in this case, ganache AND toasted meringue), this mouth-watering cake checks off everything we love about s’mores while being easy to serve to drooling guests. And it’s pumpkin because ‘tis the season!
In order for a dessert to be “s’more-ified,” we believe there must be three characteristics: 1) gooey marshmallow or meringue, 2) that marshmallow must be toasted, and 3) chocolate. Of course a traditional s’mores is sandwiched together with graham crackers, but we will give any dessert with the other three key traits a pass if they want to be considered.
For this rendition of “Will it S’more?” we are tackling the sheet cake. Not just any sheet cake, this new seasonal favorite is flavored with pumpkin and studded with chocolate chips that make it deliciously spotty with hidden pockets of melted goodness.
Chocolate appears a second time as a luscious layer of ganache frosting spread over the pumpkin cake. It is silky and rich, not to be too overshadowed by the obvious star: the toasted meringue topping.
To make this a true pumpkin s’mores sheet cake, toasty and gooey marshmallow meringue blankets the top. The organic swoops and swirls allow the flame to catch on their ridges and dramatically torch the top.
