Spiced Chocolate Toffee Crunch Cake
A cinnamon spiced chocolate cake blanketed in knit chocolate buttercream with a bit of toffee crunch filling to get you through the rest of winter. Each slice is as warm and cozy as a sip of hot cocoa under your thickest duvet.

I hope you are all off to a great start this new year. We were back in California for Christmas and rang in 2019 with two sleeping kids at my parents’ house (so basically watched Netflix with headphones on the iPad and went to sleep at 10:30pm). The trip was as relaxing as two weeks away with an almost 4 year old and a 5 month old can be. They actually did really great being displaced from their regular surroundings and handled all the holiday excitement (and extra sugar) with “minimal” meltdowns. I won’t get into too many details, but 2018 ended with a wonderful holiday season.
Spending the holidays away always means starting the new year off a little behind. In the past, this has filled me with a lot of anxiety. You see everyone else setting new goals and resolutions while you know your Christmas tree is still standing back at home and the house is mess from packing up a family of four during the busiest season of the year. But last year, being pregnant with a book deadline the beginning of February, helped me get over this. Hey, it’s not like I ever stick to new year’s resolutions anyways!
It’s already over a week into January, and I am just now saying hi here on the blog. Clearly I didn’t plan too far ahead this year - oh well! If you are feeling a bit behind or didn’t hit the ground running once the clock struck midnight on the new year too, just know that I still love you!
Now’s about the time where I launch into my goals for 2019 and all the bigger and better things this year has to offer. Well, I am changing it up a little this year. I know this will be easier said than done, but instead, I am going to focus of the goals that I am currently meeting and being grateful for the things in my life right now that I worked so hard to have.
My second book, Icing on the Cake, comes out March 26th. I’ve been working on this book for two years and need to stay committed to giving it the recognition and love it deserves once it is out in the real world. The recipes are no longer new to me, but I can’t wait for you all to see them, start baking and creating, and discover which ones you like best.
The next couple months will be dedicated to pre-order sales and marketing. I mean, what’s the point of all the literal blood and tears shed over this book if nobody even sees it and I move on to the next thing before this project is completely fulfilled? Speaking of pre-ordering books, you can (and definitely should!) pre-order Icing on the Cake! I’ll touch on this a little later, but pre-ordering is so beneficial to overall sales and publicity (basically, if book sellers see you all pre-ordering and that all you cake-loving peeps have a strong interest in my book, then they feel more confident caring copies in their stores and pushing sales).
Also, my baby girl is hardly a new baby anymore! I can’t believe she is already 5 months old. She’s trying to crawl and can’t wait to start solid foods (any day now). This is my second child, so I already know how fast this time flies. I try so hard to just enjoy her. Even though she is with me literally 24/7, some days are so busy that I miss her. I mean, she is constantly attached to me, but lugging her from one activity to another makes me miss the days with my first-born where we sat at home for hours just snuggling and making eyes at each other.
Now I know not every year will be so significant (new babies and books don’t happen all that often), but for 2019, my goal is to truly embrace these important things in my life instead of looking too far forward into the future. That’s not to say that I don’t have some other awesome plans brewing in the background (as I always do), but I want to give my book a chance to shine first before introducing too many other projects.
Then again, I can’t wait to work on a couple new ideas for Valentine’s Day….
Okay, onto this CAKE before I get carried away and gloss over just how amazing it is (exactly what I am trying not to do in the new year). I’m relatively modest, but damn that piping is so cool, right!?!?! I am really proud of myself, haha. I had this vision of piped knit and it totally worked. I may have been kneeling on my kitchen floor so I could pipe at a more comfortable height, but it was worth it.
I made this cozy cake for The Cake Blog just before the holidays. It celebrates winter, not just Christmas. And since it hasn’t even snowed here yet, this cake is still 100% appropriate for January and the coming colder months.
This cake gives off cozy hot-cocoa-by-the-fire vibes. The subtle hints of cinnamon in the cake and simple syrup give it a little something extra. But if I am being totally honest? This might just be my favorite chocolate cake (with or without the cinnamon) ever - so fudgy!!!! Hidden inside the layers is a bit of crunch from some homemade cinnamon toffee - you’re welcome.
